This tool works best with PDFs that contain selectable text (i.e. digitally created PDFs). Scanned documents that are essentially images will produce little or no text. For scanned PDFs, you would need OCR (Optical Character Recognition) software.
Yes. Select "Page Range" mode and enter a range like "1-5" or a single page number. Note that basic client-side extraction may not split text precisely by page boundary.
